Lazy Girl Kitchen: Grilled California Avocado Chicken w/ Homemade Balsamic Glaze

I can’t exactly take credit for this one.  I saw a recipe similar on a friend’s FB page and decided to give it a go.

Since you all know that I am currently working on a new plan with my Holistically Happy Health coach, and I thought this would be a great way to get started.  And with the weather being so gorgeous, I thought this would be the perfect mix of light fare with a tasty punch. 🍗 🍅

Marinade

  • 3/4 cup balsamic vinegar
  • 1 tbsp. Italian seasoning
  • salt and pepper to taste

Balsamic glaze

  • 1 cup balsamic vinegar
  • 1/2 cup honey

Toppings

  • cherry tomatoes
  • guacamole
  • mozzarella cheese (fresh mozz is the best)

 

Balsamic glaze:

  1. Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.

 

Chicken:

  1. In a small bowl, whisk together balsamic vinegar, Italian seasoning and season with salt and pepper. Pour over chicken breasts and marinate 20 minutes
  2. Heat grill to medium-high
  3. . Grill chicken until internal temperature reaches 170ºF on an instant-read thermometer
  4. Top with mozz, guac, and tomatoes (slice those baby tomatoes in half)
  5. Cover grill to melt, 2 minutes
  6. Drizzle with balsamic glaze

 

I literally devoured this in about 7 minutes.  SO GOOD!  And it’s healthy for you, so it’s a total win-win for all you health conscious babes out there.  Bikini season is finally here! I think. 😎
